Mary Wong • Executive Catering Chef
Mary Wong is an alum from The Culinary Institute of America, in Hyde Park, NY. While in school Chef Mary received six gold medals and two silver medals for her culinary talents when competing in various competitions including ACF (American Culinary Federation), and CIA’s Blue Ribbon Culinary Mystery Basket Challenges.
Prior to graduation, Mary worked with, Nobuyuki "Nobu" Matsuhisa, one of New York's top rated Japanese Sushi Chefs. She then moved her work to the Hershey Hotel in Hershey, Pennsylvania, where she cooked for The Fountain Café and The Circular Dining Room. She finally ventured back to Swarthmore, Pennsylvania in 2009 where she found home in the kitchen of New Street Catering.
Chef Mary is always excited for new culinary challenges and devotes her passion for cooking and customer service to the customers of New Street Catering. Chef Mary believes “A Chef can be mixture of artistry and craft, but you must experience, learn, and grow from it first. These are the key elements of cooking, as well as life.” Coming to New Street Catering gave her the drive and urge to become creative in her own way. “I love thinking outside the box”. With her classic French techniques combined with a hint of an Asian and Polynesian twist, Chef Mary’s is one of the area’s finest culinary talents.
Beth Mottola • Pastry Chef
Beth’s impressive background started with her work at the original Zagara’s family store in New Jersey. From their she took her skills and knowledge and was able to apply them to a 5 year stay as Kitchen Manager and Catering Chef at the Lagoon Restaurant and Night Club. With her years of experience and studies in Business Management she came to the New Street Catering team in West Chester, PA.
Beth has been working in West Chester for the past 10 years. Her background is not just limited to pastries, breads and the sweeter side of the kitchen.
Beth has prepared custom desserts and pastries for the President of West Chester University as well as the visiting President from Ghizou University in China. Her work speaks for itself and it is not uncommon for guests to requests her recipes!

2011 - Sweet Charity Event for the Chester County Community Foundation
For the 3rd straight year Beth has won at the Sweet Charity Event in Chester County. She won "Most Creative Dessert" for her Double Fudge Bacon Brownie with a Smoked Bacon Briitle, Mocha Cream and Chocolate Ganache.
2010 - Sweet Charity Event for the Chester County Foundation
She won the People's Choice Award at the 2010 Sweet Charity event for her Chocolate and Caramel Macadamia Nut Tart with Sea Salt.
2009 - Sweet Charity Event for the Chester County Community Foundation
Awarded the 2009 Most Creative Dessert in the Chester County Community Foundations for her Plum Tart with Goat Cheese & Walnut Thyme Streusel.
• Director of New Street Catering
Don Zajac’s hospitality career began in 1999 at Llanerch Country Club. While at the club, Don learned all aspects of food and beverage operations, from a la carte dining, weddings, banquets, to bar operations. Looking to advance his career, Don moved on to Drexelbrook Catering and Corporate Events Center. As an Assistant Banquet Manager, the primary focus of his work was social occasions and weddings. Eager to learn all markets of the hospitality industry, Don then moved onto the Crowne Plaza Valley Forge where the primary clientele is corporate guests. Don remained at the Crowne Plaza as a banquet captain/supervisor for over 7 years overseeing many types of corporate events and maître d’ high end weddings. While at the Crowne, Don also received his Bachelors of Science in Education from West Chester University.
Don has been in the hospitality industry for over 15 years and has called New Street Catering his home since early 2012. Don was recently promoted from the role of Catering Operations manager to Director of Catering. Excited to take on this new role, Don will continue to use his knowledge and expertise to execute flawless and successful experiences for all of New Street Catering’s current and future clients.
Diane Miller • Catering Sales Manager
Diane has excelled in the hospitality and event industry even prior to graduating from La Salle University in 2006. As a student, she coordinated events as an intern with the Irish American Business Chamber of Commerce then found employment at The Hub City View Meeting and Event Facility in downtown Philadelphia. After receiving a degree in Marketing, Diane launched her career in Catering at the University of Pennsylvania. It was there that Diane refined her planning skills and expanded her knowledge of the catering industry through the coordination of large high profile campus events.
In 2009, Diane became the 'Sales Manager' for New Street Catering in West Chester. After a two year leave after the birth of her son, she has returned to this position in Spring of 2012. From the initial consultation to post event follow-up, Diane prides herself in delivering top notch customer service. She possesses a strong ability in capturing her clients' "vision" and strives to alleviate the stress associated with event planning. Strong communication skills coupled with attention to detail and creativity have made her one of the industry's finest!
Ali McCarthy • Operations Manager
Ali has an obvious passion for the events industry, made stronger by her education at Drexel University as a Hospitality Management major. As a student Ali seized every leadership opportunity with events planned by the Hospitality Department, some events included the book release party for Dr. A. Phillip Handel’s cookbook “The Science of Good Food” as well as the inauguration celebration of newly appointed University President John Fry. During her six month co-op she was employed by the Thomas Jefferson University Hospital Foundation as Assistant Development. There she helped to execute events such as their Presidents Reception and Spring Gala honoring Arlen Spector. Simultaneously she acted as Banquet Sales and Promotions Representative for Elephant & Castle Restaurant and Pub in Center City Philadelphia. In effort to stay well rounded in Special Events, Ali obtained an internship with Eclatante Event Design and assisted in the production of weddings, bar mitzvahs, and seasonal promotion events. Ali also worked with Chestnut Hill’s Robertson’s Flowers as a Sales Associate handling daily flower orders and working alongside of the Event Coordinators on weddings, showers, promotional events and The Philadelphia Flower Show.
During her senior of college she gained employment by the renowned Philadelphia restaurateur Stephen Starr’s catering company Stephen STARR Events. After eight months of employment she was promoted to Event Manager and oversaw coordination of events for such clients as: The Philadelphia Museum of Art, Tiffany & Co, Nordstrom, Philadelphia Auto Show, The New York Historical Society, Aretha Franklin, John Legend and President Barak Obama. Ali was then offered the opportunity to manager Special Events at Citizens Bank Park and the Philadelphia Phillies. There she managed charity events, tradeshows, weddings and private events for Reuben Amaro, Joe Giles, Dave Montgomery and the Phanatic himself!
Ali has joined the New Street Catering team as the Operations Manager in May 2014.
